Shrimp, Crab ‘n Corn Chowder
This chowder is one of my all time favorites! The great thing is that you can add any of your favorite seafoods to this chowder and make it your own culinary masterpiece. I usually add scallops and chunks of lobster tail.
- 1 ½ – 3 lbs fresh shrimp, unpeeled, medium size
- 1 or 2 lbs crab meat
- olive oil
- 1/2 large onion, chopped
- 5 stalks of celery
- 1 red sweet bell pepper, diced
- 8 garlic cloves, minced
- 1 cup all-purpose flour
- 32 ounces chicken broth
- 3 cups water
- 5 carrots, diced
- 6 bay leaves
- 1 TBSP teaspoon dried thyme
- 1 TBSP fresh cracked black pepper
- 1/4 teaspoon ground nutmeg
- 6 cups Yukon Gold potatoes
- 2/3 to 1 qt Half and Half
- 1 can cream-style corn
- 2 cans cut corn
- 3 TBSP hot sauce
- 1 tablespoon cilantro, chopped
- salt (depends on your chicken broth)
Make a big pot!….. It freezes well.
Heat up a big stock pot (medium high heat)….. add the oil……Bring to temperature….. Add the onion, celery, red pepper, and garlic. Cook until tender.
Add the flour and cook, stirring constantly for one minute. Gradually add in the chicken broth, water, carrots, bay leaves, thyme, nutmeg, and white pepper.
Bring to a boil, and cook for 10 minutes, then add the Yukon Gold potatoes. Cook until tender. I use the Yukon Gold taters because they freeze much better than other potatoes.
Stir in the milk, corn and hot sauce. Return to a boil. Add the shrimp, crabmeat, and cilantro; cook 5 minutes or until the shrimp turn pink, stirring constantly.
Grandma Sweeney’s Irish Soda Bread
- 4 C Flour
- 1/3 C Sugar
- 2 TBSP Caraway Seeds
- 4 tsp Baking Powder
- 1 tsp Baking Soda
- 1 tsp Salt
- 2 TBSP Oleo
Blend ingredients as for pie crust……
Add 2 cups Buttermilk….. 2 slightly beaten eggs……. Mix well……
Add 1/2 lb of raisins……
Bake about 1 hour @350° in a 9 or 10 in pan.

- Texas Toast. or other white bread. 3 Pieces – plain or toasted
- Peanut Butter
- Tapitió Hot Sauce – or your favorite hot sauce
Lay out the Texas Toast….. Spread Peanut Butter on 2 slices of bread…… Dose undosed side of 3rd slice and place 2nd peanut buttered slice on top…… Slice or Not………. ENJOY!
Lil’ ol’ moi just had to try this sammich!…… I used Texas Toast, but only 2 slices….. Then buttered and grilled on an iron skillet.
